EatLing goes NUTS!!!! Protein packed nut sprinkles.

IMG_2796I had heaps of fun yesterday inventing some new nuts sprinkles for my salads…since I am crazy about walnuts right now and add them to my breakfast, lunch & dinner I thought how I would love to have loads of jars of different mixtures prepared so I can have some variety. Actually i want a whole shelf dedicated to jars of yummy nut & seed mixtures so will have to come up with some more ideas. And a collection of beautiful jars to display them in…a great project! Yes yes gone nuts. Apart from being totally yummy and adding great texture to soups or salads or any dish really  nuts & seeds are filled with protein, so a great boost for a vegetarian diet. My salads have become a hearty meal with the added texture & substance of a few nuts..wonderful!

So I wanted to share with you my favorite mixtures so far…….

Walnut, thyme & chili

15og Organic walnuts

3 sprigs of thyme

1 tsp salt

1 tsp chili flakes

In a heavy pan dry roast the walnuts, set a side to cool when done.Meantime take the leaves off the sprigs of thyme.

Once cool, using your hands crumble the walnuts into small pieces into your jar. Mix in the salt, chili & thyme leaves.

I recommend this on a parsnip soup..really delicious. But is also my favorite for salads.


Cumin & coriander Almonds 

200g organic almonds

2 tsp of finely chopped fresh coriander

1 tsp salt

1 tsp olive oil

1.5 tsp cumin

In a heavy pan dry roast the almonds. When they are done add the oil,salt, coriander & cumin to the pan & stir so the nuts are coated with the spices. Let cool.I chopped these once they were cool but you could leave them whole.

Wonderful addition to Middle eastern dishes.


Balsamic cashews

100g organic cashews

2 dessertspoons of balsamic vinegar

1/2 tsp salt

In a heavy pan dry roast the cashews, when done add the vinegar & salt. Cook until all the liquid has evaporated & the cashews are sticky.


Tamari sunflower & sesame seeds

1.5 cups of sunflower seeds

1 cup of sesame seeds

1/4 cup of tamari

Using a heavy pan  mix the seeds together & dry roast. Once roasted add the tamari & stir until the seeds are well coated & the tamari has evaporated.

This is a old favorite that i have been making forever. Absolutely delicious on salads, asian dishes…on everything!


See, totally easy and not time consuming.  Of course you can make bigger quantities once you discover your favorite mixes.

Do know that these mixes are highly addictive!!!
