Zucchini ribbon summer PICNIC salad……….

IMG_3426I wanted to get this post out this morning as there is a promise of a long hot weekend here in Berlin ….which means picnics, BBQs and outdoor eating!

I made this wonderful fresh salad yesterday which is the perfect salad to bring along for a picnic. Fresh with a slight bite of ginger and too easy to prepare! It is my experiment of bringing an asian flavor into a classic Zucchini salad that is usually more Italian. It also has beautiful presentation possibilities that I am always happy about!

ZUCCHINI RIBBON SALAD WITH MINT & LEMONGRASS PESTO

serves 4

ingredients:

2 LARGE zucchini

for the pesto: 

3 spring onions chopped

1/2 cup of mint leaves

1 garlic clove minced

1 Tbsp grated fresh ginger

zest of 1 lemon

2 inner stalks of lemongrass finely chopped

1 Tbsp agave syrup

juice of lemon

1/2 tsp kurkuma

1/4 tsp salt

2 Tbsp olive oil

 

For the pesto blend the ingredients together into a smooth paste, with a slight texture. Add more olive oil if needed .

Peel the skins off the zucchinis. Over a large bowl peel the zucchinis into ribbons. Add pesto and combine well so everything is coated. Leave to marinate for 30-60 mins. The zucchinis release a lot of water so you will need to use a slotted spoon to transfer into your serving container or plates.
