GREEN FOOD! EATLING´S recommended power boosting salads !

Time for greens! I have been eating a lot of kale & wakame seaweed in the past weeks because they are delicious but also because my body is asking for some extra power boosting before the looooong Berlin winter truly kicks in!

I am a believer in listening to what your body is asking you to eat to receive the vitamins & minerals it needs to stay strong & healthy. So it makes sense to me that I am craving iron rich greens at this time of the year as the sunlight gets less & we need extra energy.

It is the season for Grunkohl which is the German version of kale. Last week i had a big bag in my fridge that was in need of eating & I wasn`t sure what i would do with it all. I love to roast all veges so I thought i would try it …it was so yummy! A little crispy like chips…. the texture is really wonderful, even a little like seaweed. I topped it with scrambled tofu …now my new favorite salad! It would be really great sprinkled over a favorite soup…new possibilities!

So my first iron rich green power booasting salad is …..

ROASTED KALE TOPPED WITH SCRABLED TOFU

serves 4

ingredients:

Large bag of kale

olive oil

coarse seasalt

roasted sesame oil

400g block of firm tofu

1 onion finely chopped

1 garlic clove chopped finely

thumbsize piece of fresh ginger grated

tamari

fresh ground black pepper

Heat your oven at 170 . Heat a pan with  1 tbsp of sesame oil. Add the garlic, ginger & onion & cook for 5 mins until the onion has softened. Mash the tofu in a bowl or mixer and add to the pan. Cook for 10 mins until the tofu is browning, stirring occassionly. Add  1 tbsp of tamari and cook until all liquid is absorbed. Set aside.

Cut the kale leaves from the stem & cut into thin strips. Put the chopped kale into a big bowl, add about 2 tbsp of olive oil & using your hands massage the oil into the kale. Sprinkle with 1 1/2 tsp sea salt. Place the kale on a baking tray & cook for about 10mins. Turn over frequently as it cooks very fast so do not have the oven too hot.

Place the roasted kale in a serving bowl and top with the tofu. Top with freshly ground pepper.

My second recommendation is a wakame & sesame salad. To be honest I got addicted to this salad as a couple of months ago, I was told that seaweed is really beneficial for beautifying the skin. I researched this and found yes this is true as well as being a great source of iodine, calcium & iron. It is certainly not a bad thing to be addicted too!

WAKAME SESAME SALAD

serves 2

ingredients:

3 tbsp dried organic wakame seaweed

roasted sesame oil

1 garlic cloved finely chopped

1 tbsp of roasted sesame seeds

tamari (Soy sauce without wheat)

Soak the wakame in water until it rehydrates, about 15 mins. Drain the seaweed by squeezing out the excess water with your hands. Heat 1 tbsp sesame oil in a pan and add garlic. Cook for 2 mins until fragrant. Add the seaweed and sesame seeds & stir for 1 min. Add 2 tsp of tamari sauce and stir for 30 seconds. Place in serving bowl & let cool.
