EATLing´s New Year abundance bowl of fennel seed & caper red- coleslaw

mandarin light

I wish you all a wonderful start to the New Year! May your year be overflowing with good friends, good food, great health and greater happiness! I am hanging on the beautiful island of Mallorca with my dear friends Stefanie & Thomas for this New Year holiday where there is an abundance of sunshine and these full flavored sweet clementines that grow here. Oranges, tangerines and clementines are very popular in a lot of Asian cultures at  New Year time as they symbolize abundant happiness.  When visiting family or friends during the New Year’s season it is customary to bring a bag of  tangerines, especially the tangerines with the leaves still attached as this symbolizes that the relationship between the giver and receiver is secure. So I am happy to be surrounded by these friendly symbols as I begin the NEW Year.

Our New Years dinner was a combination of our favorite dishes or wishes and I really loved that everyone cooked something to add to our table. My personal fav was Stefanie´s chocolate lava cake I must confess. I created a  fennel seed & caper red coleslaw that has been perfect for these relaxed days as there was heaps left over and tastes even better the next day & even better the day after that!

Fennelseed & caper red-coleslaw

half of a large red cabbage

2 Tbsp capers

3 sprigs of fresh thyme- leaves removed

2 tsp fennel seeds

1 tsp honey, maple syrup or agave syrup

1 tsp salt

1 tsp creme balsamic

2 tsp dijon mustard (or mustard of your choice)

3 tsp mayo

juice of 1 lemon

3 Tbsp olive oil

Shred the red cabbage in a kitchen machine or cut finely with a knife. Add to a large bowl and mix in the fennel seeds, capers & thyme leaves so it is well combined.

Mix the dressing ingredients together and add to the cabbage mix. Mixing throughly so the cabbage is well dressed with the dressing. Thats it…the longer you leave it to marinate the better.

It is also wonderful to use as a sandwich or wrap filling.

Bye for now…
